Another super creamy, super healthy, super hardy comfort food meal the whole family is going to LOVE!

This meal comes together in under <20> minutes and the left overs are just as good as day one! My husband works at a manufacturer where leaving for lunch typically isn't an option so I made a lot of extra for him to take to work. This is PERFECT for meal prep if that's your jam. It definitely it is our house when we are running around like crazy during the week.

We buy chicken breasts in bulk at Costco because we go through it quickly and it can be turned into literally anything. Not only that, the protein content is high so while counting my macros throughout the week, it really comes in handy to hit my protein counts. The Costco chicken also has Z.E.R.O. F.I.L.L.E.R.S. and is N.O.T. I.N.J.E.C.T.E.D. with anything. It costs a little more than the chicken at Aldi but there's a huge difference in the quality. It's about $1/lb more which in my mind it worth it.

When I'm putting any type of sauce over chicken breasts I keep the chicken breasts themselves very simple. If you haven't tried the Everything But The Bagel seasoning yet, you are S.E.R.I.O.U.S.L.Y. missing out. Go get yourself some, you'll thank me. BETTER YET. Go get the Costco version. It's just as delicious as the Trader Joe brand but you get a lot more.

Ingredients
1 cup chicken broth
1/4 onion
1/2 Tablespoon minced garlic
Juice of ½ a lime
2T chopped <fresh> cilantro
S&P
1/4t red pepper flakes
1/4c dairy-free cream cheese (I use Tofutti brand chive & herb)
1. Coat chicken breasts in EBB seasoning and pop it in the oven at 400 degrees for 20 minutes
2. Saute onions and garlic on medium until the onions are translucent. Adding a little bit of chicken broth to keep them from sticking. PRO TIP - this eliminates using extra oil because those calories add up FAST and people typically forget to track their oils
3. Add chicken broth, lime juice, S&P, and red pepper flakes. Allow it to reduce over medium heat for 7-8 minutes.
4. Put sauce into a blender and let 'er spin until onions are broken down. Add cilantro and spin 'er again.
5. Transfer back to your sauce pan and add cream cheese. Mix 1-2 minutes, until the sauce thickens. Pour over your chicken. Or literally anything else because this is sure to be your new go-to.
All the flavor. None of the guilt. This dish is SUPER light and SUPER comforting.
