Creamy cheesy pasta THAT DOESN'T SUCK: gluten free & dairy free



Let's get real for a second. Dairy free cheese is just plain NOT good. There are some products that suck less than others, but they just aren't great. They are nothing close to the real thing.


I've been making different versions of cheesy pasta (sort of a white mac & cheese) forever and I finally just broke it down to the basics and went with the most simple recipe I could think of and you know what? IT WAS AMAZING. Not only that, after I posted it on Instagram I had multiple people reach out and say they tried is and loved it as well!


I call that a win!


This recipe only requires FOUR ingredients. Seriously. It's going to kick any cheesy craving you have and it's actually going to taste good. It may never beat that delicious Kraft mac & cheese deliciousness, but it'll definitely get the job done. If you and your kids need a super simple week night meal or someone just needs a little comfort food in their life, this is the quick recipe you'll want to have saved.



When it comes to dairy free products, I've gotten very picky. Tofutti cream cheese is one of the products that I keep multiple of in my fridge at all times. My husband eats it often as well and gives it a thumbs up! That, coming from someone who can eat regular cream cheese alllll he wants. We use their sour cream pretty often as well.

Serves 4.


Ingredients:

  1. 10 ounces of your favorite gluten-free pasta (I always use Barilla brand)

  2. 1/4 cup dairy free cream cheese (tofutti)

  3. 1/2 cup plant-based milk (Ripple unsweetened)

  4. 3/4 cup dairy free cheese shreds (daiya pepperjack) salt and pepper to taste

Directions:

  1. Cook your pasta according to the directions on the box

  2. Add the rest of the ingredients over warm pasta and let it melt

  3. Stir in any additional seasonings you want and enjoy!
