Roasted corn is one of my absolute favorite vegetables to throw on the grill. My Grandma and Grandpa come to town often but there's always one trip in the fall that comes after they have harvested all the corn from their garden and they bring it to town for our family to take what we would like. There is NOTHING better than fresh corn. We freeze it and have it on hand all winter long.

There are so many ways to top roasted or grilled corn! It really just depends on your mood. A few of our favorites are:
- Dairy free parmesan and garlic
- Fresh basil and dairy free parmesan
- Dairy free feta and chili powder

Chili Lime Garlic Butter with Roasted Corn
1/2 cup dairy free butter
2 teaspoons minced garlic
1 tablespoon chili powder
1 lime (juice)
1 teaspoons salt
- Cook your corn however you prefer. We either put them on the grill (after soaking in water if the husks are on) or in the oven on 375 degrees for 20-25 minutes
- Place ingredients in a small saucepan and melt over medium heat
- Brush butter on corn (or, of course, anything you would like!)
- Store butter back in the fridge
